PRODUCTION PER HECTARE: 12.000 kg per hectare

VINIFICATION: The clusters are de-stemmed and the grapes cryomacerate at about 5°C for 36 hours; they are then gently pressed, at a maximum -0,9 atmospheres. The must is clarified through enzymatic settling followed by centrifuging, then ferments with cultured yeasts at 15-16°C. This procedure allows the extraction from the grape skins of compounds that are responsible for the distinctive characteristics of this wine

MATURATION: In steel

APPEARANCE: Pale straw yellow, with greenish highlights

BOUQUET: Rich and distinctive, with hints of sage and green pepper

PALATE: Full-flavoured, aromatic and long-lingering

SERVING SUGGESTIONS: Perfect with seafood salads, “Ravioli di magro” (without meat), baked or grilled fish
