VINIFICATION: The clusters are de-stemmed and are given a 24-hours cryomaceration at about 5°C. The grapes are then gently pressed, at a maximum -0,9 atmospheres. The must is clarified through enzymatic settling followed by centrifuging, then ferments with cultured yeasts at 15-17°C. This procedure ensures the extraction from the skins of the compounds that make this wine distinctive

BOTTLE AGEING: 3-4 months
APPEARANCE: Straw yellow with greening highlights
BOUQUET: Subtle fragrances of green pepper, ripe melon, banana and tomato leaf
PALATE: Dry and elegant with good acidic grip
SERVING SUGGESTIONS: Sauvignon Ca’ Bembo is not styled to be aged but to be enjoyed within two years, to gain the fullest pleasure from its fragrant youthfulness and its refined bouquet. It is outstanding when paired with asparagus and egg dishes, cuttlefish stew, angler fish and eel. It is best served at 10-12°C in large tulip-shaped stemware
