Vinification: The clusters are de-stemmed and the grapes cryomacerate at about 5oC for 36 hours; they are then gently pressed, at a maximum -0.9 atmospheres. The must is clarified through enzymatic settling followed by centrifuging, then ferments with cultured yeasts at 17-19°C. This procedure allows the extraction from the grape skins of compounds that are responsible fr the distinctive characteristics of this wine.

Maturation: In steel

Bottle ageing: 1-2 months

Appearance: Pale straw yellow, with greenish highlights

Bouquet: Rich and distinctive, with hints of sage and green pepper

Palate: Full-flavoured, aromatic, and long-lingering

Serving suggestions: Perfect with seafood salads, ravioli di magro (without meat), baked or grilled fish.
