Vinification: The clusters are de-stemmed and the grapes gently pressed, at a maximum -0.9 atmospheres. The must is clarified through enzymatic settling followed by centrifuging, then ferments with cultured yeasts at 15-17°C; the result is a wine with crisp aromas and a full-flavoured palate

Maturation: In steel

Bottle ageing: 2-3 months

Appearance: Golden yellow

Bouquet: Elegant, fruity, ad well-balanced, with fragrances of ripe pear

Palate: Full-flavoured, velvet-textured, and dry

Total acidity: 5.50 g/l;
pH: 3.44;
Dry extract: 20.50 g/l
Total SO2: 84 mg/l (legal maximum: 200 mg/l)

Serving suggestions: Perfect with fish soups, in particular the traditional Friulan “Boreto alla Graesana”, tuna with sesame, cappesante au gratin, and spaghetti alle vongole
