Vinification: The clusters are gently de-stemmed and pressed, and the must ferments with cultured yeasts in steel fermenters at 28-32°C for 10-15 days, then racked into steel tanks for malolactic fermentation and maturation

Bottle ageing: 3-4 months
Appearance: Deep ruby red tending to purple
Bouquet: Heady, youthful and fruity, with emphatic impressions of wild blackberry and sour cherry, very distinctive
Palate: As a young wine it is complex, tannic, and with good acidic grip; it mellows as it ages and develops a pleasant bitterish note on the finish

Serving suggestions:
When youthful, it is perfect with red meats and sausages; as it ages it partners well with game, aged cheeses, such as Montasio Stravecchio and Parmigiano Reggiano with walnuts. Best served at 18-20°C in very large stemware
